Behind The Scenes At Isle’s Backyard Garden

Finding an upscale and interesting place to visit in Florida is as easy as visiting the Isle® Casino Pompano Park. This public gaming facility has an enormous amount of activities, libations, and foods to experience while visiting. Perhaps the most interesting aspect of the food venues is the Isle's Backyard Garden.

This marvelous garden houses an astounding assortment of fruits, herbs, and vegetables that are grown on the property and used daily in the restaurants. Growing a fresh food supply ensures that all of the restaurants on property are serving the highest quality foods to the diners. Esteemed Chef Aaron uses these fresh ingredients to create one-of-a-kind fresh and bright dishes in the restaurants.

Andrew is the supervising horticulturalist. He takes care of the fruit and vegetable plants to ensure the highest quality produce for recipes such as the Black Crimson Tomato Salad or the Caprese Salad. Examples of the ingredients grown for these recipes include fresh grown black heirloom tomatoes and fresh basil. Of course there are other locally sourced ingredients involved in the finished salads featured here:

    Black Crimson Tomato Salad
    Fresh grown black heirloom tomatoes
    Feta cheese
    White balsamic vinaigrette

    Caprese Salad
    Fresh grown black heirloom tomatoes
    Fresh mozzarella cheese
    Balsamic reduction
    Fresh basil

The farm-to-fork movement stresses that fresh food is always best. After all, who would want to eat over-processed food when you can eat locally sourced fruits and vegetables, and natural meat and dairy products. The benefits of farm-to-fork include:
Maintaining the health benefits and nutrition of the food
    Supports local farms and producers
    Keeps our food supply safe
Avoids use of genetically modified foods
Keeps the local food supply diverse
Reduces the environmental impact of factory farms and large food producers

Having these fresh ingredients just minutes away from the plate is only one benefit of growing produce on-site. This also saves on the cost of fuel and helps the world in the effort to minimize the harmful gasses that are emitted by transportation each day.

Being able to supply the restaurants with fresh vegetables, fruits, and herbs each day right from the same property allows the restaurants to keep their prices at a low cost to the diners. There is nothing better than being able to eat a locally sourced, healthy, and inexpensive up-scale meal in the most inviting of environments. There are six different types of restaurants offered here where diners can choose to eat, thanks to the Isle's Backyard Garden's fresh vegetables, fruits, and herbs.

This restaurant starts the day by opening the bar at 4 p.m. and is open until 10 p.m. On Friday and Saturday, it is open until 11 p.m. for the late night diners. It is closed for business on Monday and Tuesday. This award winning restaurant takes top grade steak and marries it with fine wines. Live performances and excellent food make this restaurant a definite destination for the diner looking for a sophisticated and hearty meal.

The garden supplies this restaurant with essential fresh herbs such as rosemary, thyme, flat-leaf parsley, oregano, and basil. Open after 5 p.m. on days of operation, this restaurant is closed on Wednesday and Thursday.

Italian fare on the go is the idea behind this restaurant. This casual walk-up ordering and window pick-up offers fantastic traveling food such as chicken fingers, Paninis, hoagies, salads and fried mozzarella. Bexpress is open every day from 11 a.m. to 11 p.m. offering carry-away fare that is fast and affordable.

This exclusive restaurant is actually a food truck located track-side and is only open on the evenings of live racing and special events. The food truck’s menu focuses on delicious casual foods such as sliders, mini Paninis and street tacos. All of these made-to-order mini favorites are created from fresh vegetables, herbs and fruits from the Isle's Garden and local vendors.
